Ingredients (1 Serving):

 1 Chicken
 Salt
 100g Five Grains Rice
 20g Premium Wisconsin Ginseng III
 4 cloves Garlic
 1 can Superior Plus Korea Abalones
 2 Red dates
 1 tsp Salt
 1 litre Water
 Spring onion

Instructions:

  1. Rub salt over chicken and wash
  2. Wash rice thoroughly
  3. Add half of the washed rice into the chicken cavity. Add half of the abalones, garlic, red dates, half of ginseng and then add the rest of the rice
  4. Transfer chicken into a pot and add the remaining abalones, reserve brining liquid
  5. Add remaining ginseng, add brining liquid, water and season with salt
  6. Cover and bring to a boil, lower heat and cook for about 1 hour 15 minutes
  7. Cut open chicken down the breast bone and garnish with spring onion

Ingredients (1 Serving):

 2 packs of Superior Braised Japanese Golden Abalone
 20g Jin Hua ham
 1 litre of chicken stock or Drip Chicken Essence
 8 Chinese mushrooms (soaked)
 1 pack of baby Bok choy (150g)
 2 tbsp abalone sauce
 1 tbsp oyster sauce
 0.25 tsp dark soy sauce
 2 tbsp Hua tiao wine
 100 ml water (adjust to taste)
 1 tsp sugar

Instructions:

  1. Clean and wash abalones
  2. Cut Jin Hua ham into small cubes
  3. Add chicken stock to pressure cooker
  4. Add ham, abalone sauce, oyster sauce, dark soy sauce and Hua tiao wine
  5. Add abalones and soaked mushrooms, cover and pressure cook 15-20 minutes
  6. Blanch bok choy in salted boiling water with oil for 2-3 minutes, drain and set aside
  7. Plate bok choy, mushrooms and abalones
  8. Mix braising liquid with water and sugar, thicken with cornstarch, then pour over dish

 

Recipe 3: Braised Pork Belly with Abalone

Ingredients (1 Serving):

 800g pork belly
 4 cans of Superior Baby Abalone Australia
 4 tbsp light soy sauce
 2 cups Shaoxing wine
 60g Rock sugar
 1 tbsp dark soy sauce
 10 slices ginger
 8 cloves garlic
 150g spring onions
 8 dried shiitake mushrooms
 300g baby Qing bai

Instructions:

  1. Soak dried shiitake mushrooms in hot water and trim stalks
  2. Blanch pork belly in boiling water for 3 minutes. Cool and cut into 2-inch cubes. Tie each piece with butcher’s twine
  3. Layer spring onions, ginger and garlic at bottom of pressure cooker
  4. Add pork belly skin side down with mushrooms
  5. Pour Shaoxing wine, light and dark soy sauce, abalone liquid and rock sugar
  6. Pressure cook for 30 minutes (handle cooker carefully)
  7. Add abalones and cook for another 8 minutes
  8. Blanch baby Qing bai and plate in a circle
  9. Remove pork belly and untie twine. Plate mushrooms, pork belly and abalones
  10. Spoon sauce over and serve
