Ji Gong Bao (Chicken Hotpot Stew) with Traditional Black Boned Chicken Tonic

This flavourful Ji Gong Bao Hotpot is enriched with nourishing goodness from Eu Yan Sang Traditional Black Boned Chicken Tonic! To power up the nutritional value of this stew, you can also use Eu Yan Sang Black Boned Chicken Tonic with American Ginseng, Cordyceps, Goji Berries and Huai Shan. Do you know? Along with the rich aromas of Sichuan peppercorns, fragrant ginger and dried chillies, this dish is perfect as a cosy one-pot meal for weeknights.

Ingredients used in recipe

  • 3 bottles Eu Yan Sang Black Boned Chicken Tonic
  • 1 whole Chicken (cut into pieces)
  • 15 – 20 Dried Red Chillies (deseeded)
  • 5 cloves of Garlic (sliced)
  • 5 stalks Scallions (cut into 1 inch strips)
  • 1 tbsp Black Peppercorns
  • 3 tbsp Rice Vinegar
  • 3 tbsp Light Soy Sauce
  • 2 tbsp Dark Soy Sauce
  • 2 tbsp Sugar
  • 2 litres Water
  • Coriander for garnishing

Suggested hotpot ingredients

  • Enoki mushrooms
  • Oyster mushrooms
  • Bok Choy or any other vegetables of your preference
  • Tau Kee aka Fried Bean Curd skin
  • Pork belly slices


Directions

  1. In a claypot, add ginger, garlic, scallions (white parts), 2 tbsp of cooking oil and stir fry over medium heat till fragrant.
  2. Add in 15 to 20 dried chillies (deseeded), black peppercorns and continue to stir-fry till fragrant.
  3. Add in chicken and stir fry to mix all ingredients evenly.
  4. Add in 3 bottles of Eu Yan Sang Traditional Black Boned Chicken Tonic
  5. Add water and allow the broth to come to a boil, then season with sugar, light soy sauce, dark soy sauce and rice vinegar. Cover and simmer over low heat for 20 minutes for chicken to cook through and flavours to fully infuse.
  6. Add green parts of scallions and your preferred hotpot ingredients.
  7. Once hotpot ingredients are cooked, garnish with coriander and serve.
