Recipe 1: Abalone Rice Stuffed Ginseng Chicken Soup

Ingredients (1 Serving):

 1 Chicken
 Salt
 100g Five Grains Rice 
 20g Eu Yan Sang Premium Wisconsin Ginseng III 
 4 cloves Garlic
 1 can Eu Yan Sang Superior Plus Korea Abalones
 2 Eu Yan Sang Red dates
 1 tsp Salt
 1 litre Water
 Spring onion

Instructions:

  1. Rub salt over chicken and wash
  2. Wash rice thoroughly
  3. Add half of the washed rice into the chicken cavity. Add half of the abalones, garlic, red dates, half of ginseng and then add the rest of the rice
  4. Transfer chicken into a pot and add the remaining abalones, reserve brining liquid
  5. Add remaining ginseng, add brining liquid, water and season with salt
  6. Cover and bring to a boil, lower heat and cook for about 1 hour 15 minutes
  7. Cut open chicken down the breast bone and garnish with spring onion
     

 

Recipe 2: Braised Abalone with Mushrooms

Ingredients (1 Serving):

 2 packs of Eu Yan Sang Superior Braised Japanese Golden Abalone
 20g Jin Hua ham
 1 litre of chicken stock or Eu Yan Sang Drip Chicken Essence
 8 Chinese mushrooms (soaked)
 1 pack of baby Bok choy (150g)
 2 tbsp abalone sauce
 1 tbsp oyster sauce
 0.25 tsp dark soy sauce
 2 tbsp Hua tiao wine
 100 ml water (adjust to taste)
 1 tsp sugar

Instructions:

  1. Clean and wash 2 packs of Eu Yan Sang Superior Braised Japanese Golden Abalone
  2. Cut 20g Jin Hua ham into small cubes
  3. Add 1 litre of chicken stock to a pressure cooker
  4. Add Jin Hua ham, 2 tbsp abalone sauce, 1 tbsp oyster sauce, ¼ tsp dark soy sauce, and 2 tbsp Hua tiao wine
  5. Add abalones and 8 soaked Chinese mushrooms, and cover and cook in the pressure cooker for 15-20 mins
  6. Add 1 tsp salt to a wok of boiling water and 1 tbsp oil
  7. Blanch 150g of baby Bok choy for 2-3 mins, and drain and set aside
  8. Plate the Bok choy, braised mushrooms and abalones
  9. Add 100 ml water to wok (adjust to taste), and 100 ml of braising liquid from the pressure cooker
  10. Add 1 tsp sugar (adjust to taste)
  11. Thicken with 2-3 tbsp of cornstarch solution
  12. Pour sauce over the dish and serve

 

Recipe 3: Braised Pork Belly with Abalone

Enjoy the rich flavours of tender Braised Pork Belly and Baby Abalone. Together, they create a perfect mix of taste and texture. This luxurious dish is a culinary masterpiece, offering a melt-in-your-mouth experience with every bite.

 

Ingredients (1 Serving):

  800g pork belly
  4 can Eu Yan Sang Superior Baby Abalone Australia
  4 tbsp light soy sauce
  2 cups Shaoxing wine
  60g Rock Sugar 
  1 tbsp dark soy sauce
  10 slices ginger
  8 cloves garlic
 150g spring onions
  8 Dried shiitake mushrooms
  300g baby Qing bai

Instructions:

  1. Soak the dried shiitake mushrooms in hot water, trim stalks and set aside
  2. In a pot, blanch pork belly in boiling water for 3 minutes
  3. Remove and set aside pork belly to cool. Cut the pork belly into 2-inch cubes. Use butcher twine to tie around each pork belly pieces so they don’t fall apart when cooking
  4. Using Pressure Cooker, lay the spring onions on the bottom of the pot
  5. Place 10 slices of ginger and 8 cloves of garlic on top of the spring onions
  6. Add pork belly skin-side down with soaked shiitake mushrooms
  7. Add Shaoxing wine, light soya sauce, dark soya sauce, liquid from canned abalone and rock sugar
  8. Cover pressure cooker pot and pressure cook for 30 minutes
    *Operate with Cautious for Pressure cooker 
  9. Open the pressure cooker cover, add the abalones to the pressure cooker, continue to cook for another 8 minutes
  10. Blanch the Baby Qing Bai and plate them in a circle
  11. Take out cooked pork belly and cut butcher strings
  12. Plate mushrooms, braised pork belly and braised abalone
  13. Spoon sauce over dish and serve
